Beef and Corn Dip

Jodi’s Beef and Corn Dip

I threw this recipe together on the fly for our Antietam Valley Farmers’ and Artisans’ Vendor Meeting and it received rave reviews. I had no idea what I was doing, or what it would taste like, but it worked! Served with tortilla chips, this dip travels well in the crock pot for gatherings of all kinds.

3 pounds Gauker Farms ground beef

1 onion, chopped

1 can corn, drained

1 can diced green chilies

1 8 oz package cream cheese, cubed

2 – 8 oz containers Conebella Farm’s bacon horseradish cheddar spread

salt and pepper to taste

Brown ground beef and chopped onion in a pan – in batches if needed. Drain. Add to crock pot with remaining ingredients. Heat on high for 1 hour or on low for 2-3 hours. Stir well and serve with tortilla chips or corn chips.
